    Yes should be ideal Chris. Yet to try it as it's still not dried out enough. I need to experiment more...smoked some cheese a couple of times which turned out great...even the wife commented on how good it was. Although mother in law has filled her head with nonsense about all smoked food being carcinogenic.

    Not long back from the Imperial Palace:

    I always listen to taxi drivers (and barbers), especially the one who used to work as a chef and kept on banging on about this Dim Sum place. I tried it with a work colleague a couple of years ago and we were blown away by the quality. Another chap, who I used to be at uni with and who works mostly in the Far East, kept going on about the food he had on his travels. So I took him to this place. He said it was the best of its kind that he had tried in the UK. The only time I have had better was at a place in San Francisco where chunks of steamed yellow fin tuna and other such delicacies were on offer.

    The Imperial Palace is always busy and its clientele is 80% Chinese - always a good sign.

    We had 4 steamed and 4 fried dim sum dishes, plus their quite outstanding pork with crispy noodles.

    With jasmine tea and two bottles of Tsingtao beer, the bill for three of us was just over a Bullseye....................great value!

    Today's saute. Sweet Italian sausage, some of yesterday's mushroom mix, a few tablespoons of tomato sauce, deglazed with balsamic vinegar and red wine, one can each of beef, and chicken broth, fresh rosemary, sage, dried oregano, and a couple of bay leaves. It's on the simmer, I'll let it go for at least an hour.

    My mother in law loves me!! This I know because when we dropped her off at her house she asked if I would like a slice of the pollo de matambre she had delivered this morning.
    So that's dinner sorted for me tonight....no idea what the wife is having.
